Look at it this way. The video was uploaded on Christmas. It was probably the day the other three people got the game, and hence why the drums are on easy, and the guitar and bass are on expert (from previous Guitar Hero games). They also went online most likely because they were looking for a guitarist because the full band game is only packaged with one. So, the drums are on easy because it's more than likely the drummer's first time (or day) playing them.

Maybe it´s the slider that produces extra strums. You can turn it off by pausing the game during a song and then go to the options. If that doesn´t help you maybe have to get a new guitar. =/
