why is it that every version of this song sounds completely different to the excerpt on "Üdü Wüdü" re-releases?

Because the Udu Wudu bit is just a tiny part of the piece. The full piece is now 50 minutes long!
There are some good bootlegs of it out there. Try typing "Zeuhl and Beyond" into a search engine for starters.
