Does the speed at which you turn the crank change the tone or just the volume?

It changes both the timbre and volume but not really pitch significantly (although inevitably there is a slight pitch change of probably less than a semitone - noticeable when the crank is first started up).

The left-hand controls the pitch using the keys which press onto the chanter (tune) strings

Certain Hurdy-gurdys (including this one) have 'Buzzing bridges' which allows the player to produce a buzz when the handle is turned in short, fast bursts.

Check out the Erhu from China. If any well-played instrument can make you cry it's the Erhu. If you live near a Chinatown (as I do in London) you may get dodgy buskers playing renditions of famous western songs such as that infamous Titanic movie melody which doesn't do the instrument justice. However, it can sound like the saddest sound in the world.. I would love to record some Erhu.
