  • This only issue, is that I make my cakes from scratch..I find cake box are always more most, than from scratch. But I will try your great tips for flatting right after the come out of the oven.

  • I make cakes for a hobby, and thought I was the only one to wrap hot cakes in plastic wrap, and put them straight into the freezer. It seems so strange I don't tell anyone, but all my cakes are so moist, people can't believe they're mixes. I like your parchment paper squares from Sam's idea. I hadn't thought of that. And I must get one of those giant boxes of plastic wrap. What a savings.

    Your style of video is so down to earth, and casual. It's like I watching my sister baking.

  • I found another good tip with cakes:

    If your using a box cake (or any cake cause i dont see why it wont work)

    take about a tablespoon or so of the DRY mix into the bottem of a greased baking pan. The cake releses better than using only vegible spray and wont have that funnky flour tast that you might get from using flour and grease. Try it! It realy works!

  • This would be a great idea if you feel you have to grease and flour it. I never do that. I always use wax paper in the bottom then there's no need for either but I do spray the sides. It will never stick with the wax paper in the bottom. But great idea instead of flour if you choose that way.

  • Can i use parchment paper instead of wax paper?

  • Absolutely. Actually, parchment paper is best but it's more expensive. As you know I'm all about saving money. But pp is absolutely the best.

  • Okay then I will do it. I actually was thinking about this today because I have a really good recipe for the filling. I will show you how to make it and how to fill the cupcakes. If you learn how to do this, you will ALWAYS be the hit of the party. My 11 year old, Maxey, likes to fill cupcakes too. Soon, very soon.

  • Took a cake decorating course at community college. There was 10 of us in the class which was good, but the tools costed me alot. I enjoyed watching your video on youtube. I hope you get your website up and running soon. Would like to take your class instead going back to college again.

  • Oh my goodness, you are a so amazing for doing this. I have to say that I have taken all of the wilton cake decorating classes and bought everything they asked forbut what good does it do if you cant use. I had a pretty good teacher but with almost 20 people in the class all the times it was hard to really get help with something. I practice all the time but from time to time I need help. Thank you for doing this, you have become my favorite person to watch!

    My website, hopefully, will be up by 8/18/08. I will be building it slowly as I am not a computer guru and since I do everything as cheaply as I can, I'm doing it myself. Please excuse any glitches you may encounter. I'm learning. I've had so many requests for pictures that I will be putting them on there slowly. I have to take them out of my Creative Memories album. Uh, oh. Money wasted. When it's ready, I'll do a youtube video telling you where to look.

  • Thank you DemonDaysOpenDoor. And there's so much more to come. I'm going to actually give some instructions and the icing recipe that i've been asked to make for large groups over and over again. Believe it or not, people will buy this icing without the cake !!! Actually, I do a few things that I will show anyone to do if they want to learn. They can be really good ways to make money on decorations. No special tools or talent, just information that no one else will give you.
