Spam goes on bottom, rice pressed down above it. Keep a basin of salt water to rinse your hands and the rice mold so rice doesn't stick. Just go ahead and use your hands to measure out the rice already. Daintily poking it off the paddle takes forever-- truly painful to watch. You've got a fine implement in that wooden mold there; throw yourself into the job, man! Get your hands wet!
