  • meta is acctually used in wine making but it kills yeast...im sure that the sulfite had nothing to do with it though. just saying I use the same sulfite in my wine.

    another thing, wut if i use juice that has one month left to get expired would that affect the quality of wine knowing that i would let it sit for two more months?

  • The preservative used in the white grape juice is also used to keep canned peeled tomatoes firm and to fire treat wood! They have Palm tree wine here in the Philippines called "Tuba"! "it is made form the juice of a coconut tree NOT the coconut itself. The natives climb a palm tree and extract the juice! it ferments in one day, and is super cheap. It has a dark orange color, and gets stronger in time! Would love to apply an advanced fermenting to it to make it clear and distill "Tuba liquor

When you want to drink remove a cup from the water and pour the wine! wait a minute or two! The condensation of the water trapped on the outside of the terracotta cup will cause the perfect temperature for drinking white wine

  • The plastic taste might be there just because the container used for the fermentation process was plastic, the stronger the alcohol the bigger the chance it will dissolve some plastic into the wine, i'd would have taken that white wine and instead of dumping it i'd distill it purely for the alcohol, its very easy & fast.

  • @AlexPanda1991 Like I said before, I think I usually let it vent by leaving the cap partially unscrewed for the first 24 hours, but it ferments better if you keep it tight, and only vent it when the pressure is too much. It is really a game of watching and testing.

  • @AlexPanda1991 No worries - you can Youtube search Federweisser too. There are some good videos. Just pour it carefully into any clean bottle, and stop pouring when the silt at the bottom starts to get stirred up into what you are pouring. Wait for it to settle and pour the rest. Carbonation is a natural by-product of the fermentation process; when you make regular wine, you need to vent the gasses. For Federweisser, you don't vent - but you DO need to release the pressure occassionally.

  • @AlexPanda1991 btw, after 24-48 hrs (depending on when you want to drink it) you should carefully rebottle it, leaving as much of the silt in the first bottle as possible. The remaining yeast that is still floating in the bottle is still active and will continue to ferment the sugars and even a little more if you add more sugar. Federweisser has a yeasty taste, but if you get it really carbonated, it is a tasty and fun drink.

  • @AlexPanda1991 The wine goes through two fermentation periods. There is the primary fermentation which takes about 2 - 7 days. Then there is the secondary fermentation, where you rebottle and let it sit for several months.

    For the Federweisser (Feather Water) you only use the primary (most aggressive) fermentation, which provides all the alcoholic content.

  • On a less joking matter, you shouldn't blame it specifically on the extra ingredient, there could possibly have been slight differences in the way you made the white wine, like didn't you use a different type of yeast for each?

  • @AlexPanda1991 just add the sugar and yeast to a bottle of white grape juice and let it ferment. Only put the cap on part of the way for the first 24 hours, then turn it tight (you can add a bit more sugar at that point too, as it will carbonate further). I used several small glass Welch's bottles.  Enjoy!

  • Hey bud... Here's an idea, try turning your wine into champagne... Go and buy a "sodastream" (makes pop and carbonates water under a minute) pour in your welch's wine, carbonate it and review it.

  • I did the experiment you did on the red wine. Only difference is I used a balloon to help with monitoring it. And I have to say, Dude I did it for a two week process and it came out REALLY REALLY GOOD! Awesome video, As a person who has watched the video and did the exact same step.... It really does work.

  • @they0101 I think you're a bit confused. Distillation is the dangerous (and illegal for the average joe) method of refining fermented ethanol and has an acute danger of producing the nasty byproducts such as methanol which are in high enough concentration to cause blindness and death. This is a relatively safe (although maybe not that tasty) process.

  • Because of the nature of the grape the is no way of making it less strong without spoiling the wine.

  • What can you do to make it LESS strong? I would like to have something less than 9%.

  • I honestly have to say that this is the best wine I've ever tasted... I've made it a few times now, and a new batch is ready this Saturday, it has a good nose and a tastebud happy flavor, and if you like great aged oaked red wine then use bread yeast it really enhances the flavor.   • Thanks, Jake. I made the red wine and it was awesome!  I also made a Federweisser from white grape juice, which also turned out quite well - I would recommend giving that a go. Just add the sugar and yeast and then 48 hours later it's ready to drink (some yeast remains floating in it, hence the name). Cheers!

  • potasium metabisulfite is a wine clarifier as well as a wild yeast sanitiser. That is defanitly why the white wine is so clear. The plastic taste comes from the container.

  • Hey Jake...Thanks for the Videos. I have 2 Welchs about 3 weeks into the proccess now. I had 3 questions. 1. Any idea the alcohol proof that these would be after sitting for the 3 months like you had them? 2. Any idea how long the wine will stay fresh and hold its taste after opening them after the 3 months? 3. After the 2 weeks is up, and I rack the wine...should the cap still be placed on loosly?

  • :/ i whipped up a bottle last week and i smelled it, and its smells bad :( ha! throwing it out. i guess maybe some how bacteria got into it or something, but i will attempt it again- carefully this time. thanks for the vids, they help a lot.

  • @gmondragonmorales Nope,After you transfer to clean container,clean and sanitize your original jug replace the wine,cap tight and let it sit for at least ten days or more to settle and clear,you still wind up with very small amount of sediment on the bottom but not much.

  • The wine would be better with a lower alcohol content. Adding sugar does not make the wine any sweeter. Sugar = alcohol. Ideally you want the natural sugar of the juice to be consumed and the yeast die of starvation. You will get about 10% alcohol this way. For a sweeter wine, only ferment about a day and then put a few shots of grain alcohol into the bottle. The added alcohol will kill the yeast leaving some of the original sugar.
