I think you can only double him but I'm not sure. On the bigger enemies sometimes Chris or Sheva do they're special melees on the first or second though. On the chaingun guys I know Chris does that backhand slap thing that I forgot the name of on the first hit.

Probably. And ya the magnum ammo is pretty rare. I can only remember two places where there is magnum ammo off the top of my head :S
