I never thought about using one of those air stoppers for fermentation, only wine. AMAZING tip! What is the black thing in the lid? Is it something I could buy at a brew shop as well? I think you just saved me spending $80+ for a fermentation crock! Thank you!!! :)
@TrevorsGarden I think I see why they probably didnt turn out as good. First, I see that you didnt cut the stem end off the cucumbers. I heard leaving that on causes the pickles to become soft as they release an enzyme during fermentation. 2. When you filled the inner container with reg tap. If you had pushed it into the brine it would have filled up and there would have been no need to add water thus diluting the brine. Just somethings I kinda caught but you were on point!
Great video looks like we are both using the Picklemeister. How did your pickles turn out, I'll bet the addition of hot chillies makes them nice and spicy, I've got some chillies coming on in the garden I think I will add them to my sauerkraut when I make it.
Trevor, your videos are always excellent, but I wonder if you could boost the audio levels a bit, I have a hard time hearing them on my laptop (with the sound cranked all the way up). Keep up the great work!
The grape leaf thing is just a myth. It was created for people who use the canning boiled jar method.
Grape leafs actually destroy cucumber crispness with fermentation.
also, cutting them into wedges will further destroy crispness.
You must leave the cukes whole and ferment them for a month to achieve maximum flavor.
This method will result in soggy, soft and flavorless pickles.
Adding the word "lacto" before fermented is redundant. Dumb vegan.

I cut off both ends and used grape leaves. Mine tasted great but had no crunch. Anybody know why?

This batch did not turn out as good as the one I made before it. You don't have to innoculate it although you can.
