Good Eats is great. There is 1 mistake in this episode though, at 1:32 they are Little Neck clams not Cherry Stones. Try and eat Cherry Stones like that and you will be chewing for weeks.
Tomato based clam chowder is of Portuguise origin (Probably by way of the Azores, actually), not New York, a point which they make in the show. And the Portuguise do wonderful things with seafood, and have for centuries.
Personally, I prefer linguine in clam sauce over claam chowdah. >:P
Yeah. EVEN ALTON HIMSELF states unequivocally that he is not a chef. By his own measure, which is really good, he is just a guy who knows how to cook and make it entertaining.
Im thinking that using a hand blender would turn it into mush instead of chowder. Maybe it because Ive only had it with the cubed potatoes, not mashed potatoes.
Although some folks in RI may be historically responsible for adding tomato to clam chowder, traditional "Rhode Island Clam Chowder", uses neither diary nor tomato, instead it is clear (technically transleucent), prising the delicious flavour of the clam stock along with clams & vegetables.
that is so wrong you never ever use canned clams...

can it be fat milk not whole?
PaineHeaven 2 years ago
no because its all about the flavor all that fat is augmented enough by the clams that you shouldnt be a baby about it lol
FallenMeowBob 2 years ago
oh and there isnt much fat in milk in anyway there is no reason not to buy and drink whole milk

Interestingly he isn't really a chef. Started out in the movie industry which is probably why he is so good at this.
