Here it's very possible they used a MIDI synthetizer (that doesn't have the Playstation's hardware limiatations) to record the songs. They could also have hired a true orchestra but this would be very expensive (and quite limited in the terms of instrumentation) so not many game did this, and Castlevania definitely used a high quality synthesizer instead.
@Korban3 The Playstation can play both sequenced songs (which are similar to MIDI, although games using this uses their own format) or streamed songs (that are similar to an audio CD playing).
Castlevnia uses streamed music, and it is in XA format, which is a variant of ADPCM lossy compression.
To rip it you need a program able to rip XA sound off a playstation disc, such as PSound (that I used).

I'm curious. When you rip a tune from this game, what format is it? Did the Playstation use the midi format or something else?
