If that's the case why claim 2000 chopsticks? Unless it took them 2000 tries. Seems more like they would have just reduced the chop sticks to pulp, let it solidify into the general shape, then carve, shave, and smooth out the details.
No, the description says it was made out of 2000 chopsticks. You can see the individual pieces of chopsticks when it zooms in on the body. They probably glued a block of chopsticks and sculpted out of that.
