OK im sick and tired of saying things like "marco is a cheat because he uses the stock pot". Any one who's worked in a kitchen knows that making a white stock or a brown stock takes time, money and carefull attention. NOW to the avereage home cook, that can become a major chore. Using stock pot cant come anywere close to a perfectly made brown stock ( simmering for 6-8 hours depending on the stock being made).....the knoor stock pots isnt perfect but its ideal for ahome cook.

When you sweat something, it should be over lowish heat and you should not be able to hear any sizzling. You are slowly drawing out moisture and slowly changing the acidic content of the leeks over to sugars.
@orrinization is that what rachel ray told you? number 1 that is a food processor and in restaurants we often puree hot mixtures in food processors. it is not a blender. secondly, if you dont put a sealing cover on then it wont blow up when you blend so dont criticize a 3 star chef when you probably get your cooking lessons from paula deen and rachel ray.

Be irrational if you want. With all the hormonal problems I see around me (e.g. so many men and women taking Synthroid) I don't trust that plastics manufacturers and chemists know what's going on. BPA is clandestine. Plastics changed civilization for the better, but for hot foods I'm going to find alternatives. Is it that hard to cook in glass?

He didnt wash the leeks. Leeks are known to have a lot of sand in them. He should wash them before cooking them.

Any one who's worked in a kitchen knows that making a white stock or a brown stock takes time, money and carefull attention. NOW to the avereage home cook, that can become a major chore. Using stock pot cant come anywere close to a perfectly made brown stock ( simmering for 6-8 hours depending on the stock being made).....the knoor stock pots isnt perfect but its ideal for ahome cook.
