I always thought it was Pâté de foie gras or some other form. Pate is ground meat and fat mixed into a spreadable paste, and 'de foie gras' means it came from goose liver. It's actually very tasty, I've tried it before - and when I had it, it looked like a whipped, spiraling gray blob like at 0:48.

What a phenomenal sequence- not only shows off the classic Disney animation but gives tributes to the Follies Bergere, the Radio City Rockettes, the musicals of Busby Berkley, Maurice Chevalier, Esther Williams, MGM, and even a small wink to "The Great Ziegfeld" near the very end. Thank God this was recognized in old-school, 2D animation before Disney went completely Pixar.
