Once you place a little salt and oil on the collards and massage them with your hands the waters start drawing from them and they become very tender. They are easily digested once you chew them. And actually collards are supposed to be eaten raw. The teeth do the work.
...then i rinse them, cut out holes of anything that doesnt look right,stack a bunch all in the same position, roll them up making the diameter of the roll the desired average length of the shreds. hold it steady, and with the butchers knife, cut down the middle length-wise, then i chop fine width strips. i believe this the best method ever, though the scrubbing can get very repetitive.

Now I comprehend your comment. This recipe is raw foods diet so no cooking. I never heard of eating collards raw like this. I have heard of collards used as dolmas with dates. This looks better. But the breath factor afterwards...man!

Interesting recipe...I do what I call Jay's Greens In A Skillet! I make them for my co-workers from time to time...I basically, use olive oil, minced garlic, chopped onions, red peppers, onion powder, salt, pepper, and, of course, collard greens. Throw it all in the skillet for about 30-40 minutes and voila...Jay's green's in a skillet!

Well, really being compared to a monkey is a good thing. Cause most folks eat like pigs....they eat anything. Monkeys eat fruits, veggies, and very small amounts of protein in the form of grubs. They are 99% genetically identical to humans...so its not to say it in an insulting way...its knowledge.

Not true. Once you heat your greens (or any live food) over a certain temperature you kill the living nutrients that are in them. If you jump into a skillet with oil and water and onions etc. How alive would you be? We need to elevate our knowledge and go back to the garden. Fruits and veggies were not created to be cooked....EVER!

I don't know the answer to your question about groitrogens and the frequency in which you should eat collards. However, there is a book called "Greens for Life" by Victoria Boutenko. In this book she compares human diets to that of wild chimpanzees and advocates for a massive increase of all raw greens for improved health. She advices that you mix/alter greens frequently.
