By "sauce", do you mean the oil-spice-mustard mix? If so, consider the purpose for that mixture is twofold. The oil is there to help give the potatoes a crispy browned texture. Along with the relatively high heat (450*) it basically "fries" the surface of the potato without completely saturating it, like deep frying. Without oil, they will still cook but not as nicely. The other stuff is just for flavor which is entirely up to your preference. This flavor, another flavor, or no flavor.

The reason to not use olive oil is that it has a low smoking point and tastes like olives. Most other oils will do better (except motor oil or 3-In-1). :)
I've tried this recipe a couple of times and it turns out fantastically. I like to let them bake a bit longer and cover them with cheese. I know it pretty much negates the whole reason for baking them in the first place, but oh well...

Extra Virgin Olive Oil has a smoke point of 410F or so. Around that temp the oil will begin to smoke and will also be closer to its flash point possibly catching on fire. Canola or Peanut oil has a higher smoke point than this and is recommended more to use for high temp cooking. Late response, hope that somewhat helps though.
this is a good video. For mine I'll have to use vegetable oil, and I'll probably only use salt and pepper rofl.
