At 2:30 that is not a navy pilot, it is an Air Force F-15E Strike Eagle Pilot. You can tell by the shape of the airframe and the name tag on the pilot's chest. Great video, I like the night to day thing... really nice!

If you mean in the beggining of the video, that's old footage, but the EA-6B and the E-2C are still in use today and their wings fold. Even F/A-18s fold their wings near the wingtips. At the start of the video the plane with the wings unfolding from an X shape was an A-6 Intruder. They're retired.
