Someone commits the NTS fallacy if they state someone is not what they claim based on something that has nothing to do with the criteria for deciding that. If someone says "that lady can't be a Christian because she wears jeans, and no Christian lady would ever do that", then that person would be guilty of committing the fallacy.
There is one flaw in your logic here, however. The criterion that one is a Scotsman may be independently verified (by tracing your genealogy or looking at your birth certificate). This cannot be true of one who is asserting to be a Christian, due to the myriad denominations. If they claim to belong to a denomination that, for example, does not believe in a doctrine that your denomination does, this makes him no less of a Christian.
I would say that it depends upon which doctrines he disagrees with. There are key doctrines which define the faith, and those myriad denominations you speak of would still hold to them, thus making those churches true Christian churches. That's why I was able to attend the Christian union at university and fellowship with evangelical Christians from load of different denominations. We disagreed on secondary doctrines like baptism for example, but were united on the core doctrines.

He wasn't arguing about someone that belongs to a different denomination doesn't make him a christian. He was saying just because someone asserts something doesn't make it true. If I profess to be an atheist and yet believe in a God then does that make me an atheist just because I say so. That is illogical.
Why does anyone care what this person says? If he says he's a Christian (but doesn't believe in the resurrection, for example) he's going to get found out on Judgement Day.
I don't know if i misunderstood your comment but it sounds like your saying exactly what UK is saying. That a person can say one thing yet not be what he says he is. At least that is what im getting out of when you say "he's going to get found out on judgement day". God is omniscient Psalms 139: 2-6 (all knowing) and nothing escapes him. It doesn't seem that hard of a concept to fathom that someone can say one thing and yet be another. It seems to me that we deal with people like that everyday.
