Hi. What is black vinegar exactly? Can you buy it by that name, or do you prepare the vinegar yourself?

I've been trying to figure out how to make real baozi since I left Beijing a year and a half ago.

A woman uploaded a good recipe on here recently.. dough was a bit more robbery than spongy, but it works.

Found some black vinegar too.. not sure if black vinegar alone is what you find in the baozi shop

those vinegar is the vinegar Chinese use everyday. you can buy them in bottles. it is not blended.
