anyone who knows anything about cooking and gastronomy knows that real chefs like tom colicchio are what keeps gastronomy pushing forward.

@deliriouscouture who said she was a chef or sophie dahl for that matter. she's a COOK. people tend to misuse the word "chef". As Bourdain said, a chef is someone who cooks and leads. So anyone in the kitchen that is considered a "chef" is the Ex. chef, chef de cuisine, and the sous chef respectively. You obviously don't like their public speaking, BUT their food will certainly do the talking. AND may I point out that this ain't culinary school. the audience is merely an array of serious cooks.

@frdrcksncn i take issue with the fact that there are people as attractive and similarly adept at oration that are FAR more qualified with matters in the kitchen and are obviously losing out to people like this who fancied a second career. they are not being rewarded for the skills that should count (cooking), but rather for their connections and public profile. if you wish to blindly follow those who are obviously BSing their way through it, be my guest.

People make their own luck. that's the bitter truth of it, SO GET OVER IT. Some were lucky enough to have that luck handed to them- which to some extent is pretty much like sophie herself.

Flautas are originally a Mexican dish. She mentions that this is South American dish, which I would have to disagree. There might be variations in some South American countries, but I've never heard from them. Maybe she wanted to say Latin American, but I believe that the Mexican Cuisine is different than the South American.

"Taquitos" with corn tortillas flautas with flour tortillas? No way! I like Tom and Padma but they are dead wrong.

"Taquitos" is another "gringo" term like "burritos" that are anything but Mexican.

Flautas are made with corn tortillas, period. They are thinner corn tortillas than usual. "flauta" is a flute which it resembles.

When in Mexico at a taco stand they ask you if you'd like it on a corn or flour tortilla. There is no such thing as a flauta on a flour tortilla.
