I'll tell you why I think this segment was cut from the original episode...the guy was over-selling the tapsilog.  Anthony was essentially correct, it's nothing more but "steak and eggs with rice". There are more interesting dishes he could have shown Anthony...like, instead of focusing on tapsilog, they could have shown the various dishes in the tapsilogan, like goto, pares, tocilog, longsilog,etc. Not just one dish. Anthony would have had a better time digging into a bowl of arroz caldo.

I think the problem with Augusto is that all of a sudden, he became camera shy. What with his family, especially those he was estranged to being around. As he have said earlier, he felt like an outsider, perhaps if he was there a month earlier, been able to connect with his family, his roots, even more.

I guess it also has something to do with his family being camera shy too.

i guess augusto is not that close with his realtives...and maybe he just came back without any notice letting them know that hes coming with this tv guy and crews....so the poor relatives was in a big surprise...augusto didnt have a plan for sure..maybe he didnt even hand money to his relative to buy food for them and the crew instead the relatives end up borrowing just to buy them food wich is expensive specially that sugpo(prawns)wich really cost hundreds of pesos....

I sensed a bit of disappointment with Augusto in Anthony Bourdain's tone. He was disenchanted by Augusto's vibrant audition. He was full of promises he was not able to keep, expectations from Tony/ viewers he failed to live up to. Augusto had no personality to start with then the dinner his family served was not impressive. Not telly appealing. Thanks to the other segments( Pampanga) and the other more knowledgible and personable hosts and their festive food, the show wasn't completely a bore.
