btw I didn't know that frittatas required broiling. My dad would just slide them onto a plate and then flip it onto the pan again. His frittatas also tended to have asparagus in it which might be good in this.
@ColemanMulkerin I think you can do them any way that you want. The point is just that you cook them on both sides. I like broiling them though because it burns the cheese on top a little.
I haven't tried asparagus in one of these yet, but I've tried a whole bunch of other things. You can basically make it with any ingredients you want. My favorite way now adds kielbasa and apples.

When did you start the Paleo thing? I started it and HIT together about 18 months ago (well, restarted HIT, after doing it off and on for about 8 years). Anyways, gained about 15 pounds of muscle, cut my body fat percentage in half, haven't had a zit, pain in my teet, or a cold in forever, and can go without food for nearly 24 hours without being the least bit uncomfortable.

I kind of eased into it though; first I gave up potatoes, then a week or so later pasta, then bread, then beer (that last one was the hardest). Now if I eat anything carby like that I feel sick. Yeah, I feel a lot healthier in a lot of ways too. I used to eat paleoish accidentally when I was in high school, and then I went to college and ate crappy college food which is mostly bread and pasta and such. I never had acne until....

French mustard has no flavour. The same goes for American mustard actually. The only kind of mustard that is really mustard is English mustard. Not that I'm some kind of mustardy patriot or anything... it's an objective fact that English mustard tastes better.

One good tool for getting under the eggs without breaking them would be one of those rubbery spatulas that are good for getting the last bit out of a mayonnaise or jam jar.

That bacon looks REALLY good.
I make scrambled eggs often in a similar fashion; however, I haven't learned yet how to properly flip it. I used to buy omelets at my college's cafeteria where they'd put the cheese on one half and flip the other half over it. I always liked that.
