  • Followed directions and $12 worth of ground lamb falling into charcoal. Not stiff enough for a spit with forks(falls apart) Saved the meat and finished it in loaf pan on grill.

  • i wonder how one could imitate the grill in a pan. I think the point Alton made is that by turning it the meat will constantly covered in oil/fat, so it doesnt dry, and the meat gets tender.

    What if i would wrap marinated lamb meat in aluminum foil and bake it in the pan, or put it in the oven, so it will sit in its own oil/fat? Mainly looking to get it really tender and soft.

  • @tf2cheats just like alton said about the indoor countertop rotisserie, you would be able to get the moist air away from the meat therefore it would be more like steaming the loaf and the exterior would not get golden brown it would be very soggy

  • I've made this recipe a few times, but have not been able to successfully rotisserie it on my grill without the meat falling off the spit in the first five minutes. Maybe it can only be done in a grill with that infrared heater?

    The Tsaziki sauce is so-so with the mint. Try it like Lucas makes at the Akropolis restaurant in Nesconset, NY: eliminate the mint and use some dill. Maybe it's a NY thing.

  • @poisinbunni66 I've tried this recipe and the meat does not fall off the rotisserie. I'm not sure what may not have worked for you, but I made sure that when I formed the meat that it was VERY tight and that I let it sit overnight. It was pretty sturdy.

    I agree that dill is a better choice for the tzatziki. (I'm in the west coast BTW.) The recipe I use is pretty easy. Yogurt (drained overnight), shredded cucumber (drained for an hour or so), garlic, olive oil, dill, lemon, and salt (to taste).

    Seriously, AB mentioned the rotisseries from years past, truly sucked. I am cooking my Gyro in the Cuisinart CVR-1000 Vertical Countertop Rotisserie. Check out the reviews from Amazon. I just bought mine from Costco's for 150 bux! It is fantastic! Just like a real Gyro shop! I am gonna enjoy my Gyros for dinner tonight good luck all on yer own Gyros! :)

  • Alton always does a great job and I'm sure it's very tasty, but, this is not like the gyros you buy in Greece. The meat isn't puréed it's pieces and it's pork or lamb.

  • That's true. I'm Greek and we use either pork or chicken. But since Gyro and the greek cuisine in general has many similarities with the turkish cuisine, and turkish gyro wouldn't be pork, maybe in america, that's the version that spread most.

  • @MrSoturin America is a cultural melting pot. A lot of the recipes we use are combinations of several regions. We try to take the best of each and combine them.

    I don't use traditional pita when I make my gyro's. I make a sweeter pita, the recipe for which i stole from a local restaurant. Google "Olga Bread Recipe"
