You have to beat Story mode with everyone but Aeon. Then...

To get him in Versus mode you have to unlock the "True" story by beating story with Aeon (who you get by beats Dracula's Story) then beat story mode again with Dracula

1. vampires don't bleed

2. vampires never make their enemies bleed while fighting them unless they go in for the finishing blow (more for them to drink)

3. ITS A FREAKIN VIDEO GAME IT DOESN'T HAVE TO BE REALISTIC (besides, if you only buy video games for the blood, you are really limited to the Mortal Kombat series)
