I highly doubt it was power of suggestion. I believe he really did have a free choice. I'm guessing there's an assistant below all the fish who puts the watch in the appropriate fish. at 5:41 or 5:42 ... you can see the fish kinda jolt up as if someone underneath is stuffing the watch into the fish. The whole eye poking thing is just a means to keep the fish steady as the assistant does his job.
