  • This guy is just a typical salesman.

    You DO have to sharpen ceramic knives. You CAN use a diamond 'steel' on them as well.

    Metal 'ions' do not cause food to turn brown. Dull knives do.

    First time you drop a ceramic or smack it the wrong way on the cutting board and you have one cracked/split knife.

  • The salesman does states that you need a diamond steel to sharpen them. Metal ions do cause fruits to brown faster. All fruit will oxidize but when cut with a metal knife it will happen at a greater rate.

  • Not true. The sharpness of the knife is what causes fruits to oxidize slower or faster.

    The presence of the oxygen rich environment of that fresh cut surface causes it to oxidize WAY faster than any metal ions that, if any were even there, wouldn't help the oxidation process any. Oxygen is the catalyst for that.

    That is just one of those bullcrap statements no one can actually find any scientifically documented proof of.

    Take a couple of semesters of college chem.

  • @MisterBaz1 Thing being that if you cut a apple with a metal knife and a ceramic knife see that the apple cut by metal browns 5x faster. Go ahead and try it. But, your going to be ignorant and say that it browned the same.
