  • Is it better to use granulated sugar than castor sugar? ive used caster sugar cause it was the only thing in the house. The end result isn't as stiff as yours. its alot more liquidy. Would you think the type of sugar would make a difference?

  • I tried a crunchie bar only once & i live in the usa & i thought it was amazing. so i googled recipes & it surprised me how easy it was to make honeycomb. I experimented quite a few times & i found that 3 Tbs of light corn syrup & 1 Tbs of Honey mixed with granulated sugar simmering over medium heat for about 5 minutes makes excellent honeycomb after you add 1 Tbs baking soda. Pour it out onto parchment paper. come back in about half an hour & break it, smother it in chocolate & BAM! Heaven :)

  • I had the plain cinder toffee / honeycomb at Castle Howard, but none of these videos show it the way it looked . This looks like peanut brittle minus the peanuts. I made some and that's how it turned out. (Sigh) I guess I just have to buy Crunchie bars here in the U.S., but I really like it best without the chocolate.

  • @unclaimedtreas If you want soft honeycomb you need to change the way it's made. This recipe is for crunchy honeycomb :)

    I've been trying for a while with this kind of ratio

    300ml sugar

    100ml syrup

    2 tablspoons of water (~30ml)

    10ml bi-carb

    My main problem has been getting the sugar to 'hard-crack' temperature. I bought a Candy Thermometer to help me do this but its still not happening for me.

    Hard crack occurs at 149 degrees celcius, the highest i've acheived is about 146 and it got burnt.

  • @LiLbUg99 However, I've achieved 'almost' honeycomb at temperatures as low as 130 degrees or so (the honeycomb was crumbly, but became quite chewy afterwards while you were eating it).

    Another problem is getting it 'fluffy'. I have been eating more honeycomb lately as comparisons and the commercial variants are very light and fluffy, that is the air pockets in the candy are quite uniform and larger than what i tend to achieve.

  • how long do you stir on heat after putting sodium bi..? cuz mine became flat batter when I put it on tin

  • @otagirican I only stir for about 5-6 seconds. If you stir for too long it will start to deflate.

  • @silverwhale12 I have no idea what you used. It's supposed to be hard but if you put in a bit more sodium bicarbonate ( Baking soda ) in it will not be as hard. :)

  • @8087j No. Honeycomb doesn't have peanuts in it. With peanuts & some honey it makes peanut brittle which i will make at some point. :)

  • @exacerbatedtaboo hahaha. It's an Australian saying. Typically, someone says it to conclude a set of simple instructions to mean, "And there you have it", or "You're all set". For example, "To make a ham sandwich, just put a piece of ham between two slices of buttered bread, and Bob's your uncle"

Thanks for clearing that up for me. The honeycomb looks great btw. They sell honeycomb over here in the states at convenience and grocery stores but it's chewy. My mom loves it.   • Looks like what we call peanut "brittle" round these parts. Obviously there are peanuts added to the mixture at temperature. Nice!
