Not trying to do "Santa Maria" style. I know how to do "Santa Maria" style. Been there, done that, can't stand it. And i've tried several other peoples so called masterpieces. Grilled or doing "Santa Maria" style tri-tip F-ING BLOWS. You d-bags can keep your dried up leather shit for yourselves. I have taken that crap and made it better. In 10 years of preparing this way, and 100's served, has ANYONE ever complained about tenderness, dryness or taste.
Oh, and tri-tip is sooooo much better done slow and low than grilled, so you get my vote for that, and lighter fluid's ok as long as you let it vent out and burn off way before the food gets in there, which I'm sure you did. Great job, man.
