What window is open showing curve adjustments and whatnot?

how do you use the foreground overlay to conceal the adjustment? thanks

It's not a window but the layers panel. Each adjustment is an individual layer added for it's intended effect. When you start out on a project it will only have 1... the background and you build on this to get your desired effect. In this vid he took us backwards to show us what each layer effect was.... not easy for a beginner to follow.
