I've eaten the lavender, orchid -like flowers in my salads (they're large, so sometimes I tear them into pieces. Flowers are an excellent source of honey.
The very large leaves supposedly make good burrito covers and are high in protein. I have NOT tried them in this capacity but plan on doing so come spring --in a small amount to see if I have any adverse reactions.
