I would either blanch or slightly poach the fish filets first to form the texture. Then, they will not fall apart in the wok as you try to turn them or handle them with your spatula. Also, you may want to make/cook the sauce separately. Stir fry the fish independent of the sauce. This gives the fish some wok flavor first; then, add the sauce over it. The fish will come out less mushy and overcooked this way. Just some suggestions. Thanks.
