Some of my all time favorite music from NES has got to be from Little Nemo and Mega Man II... but if I could only request one song, would have to be from Mike Tyson's Punchout! I love that bass-line when you're fighting that first fight against Glass Joe. That's a song I would listen to.

I'm gonna be the weird guy in here and suggest something from Breath of Fire. It was my first console RPG and has a special place in my heart to this day, but sadly doesn't seem to get a lot of attention from the music community.

The Forest Theme especially had the power to get me jamming out even as a kid and I'd love to hear it re-arranged.

@Vermea I really like the idea of doing Dancing Mad. There are a couple of hiccups (Not insurmountable) - First, there are some really amazing choir virtual instruments out there, which I don't (yet) have, and definitely need if I'm going to arrange something like that piece. The other thing is that there are already some really good arrangements of Dancing Mad out there, so if I do one, it has to be, like, really, really, really amazing.
