    Good bagels probably don't fit the whole Japanese bakery model of mixing and freezing the dough in a factory somewhere.

  • Dude, you rule... I watched this when you posted it and I made the plan to buy the ingredients at that time. So, tonight I finally made my first batch and HOLY COW they turned out perfect! First time I've baked anything from scratch.  Thanks for the inspiration!

    I should try with rice flour then. Just to see if it'll work.

  • Unfortunately all wheat substitutes turn into a paste rather than a dough so not ideal for bagels.

    What about corn meal? Is there a particular name for your category of allergies?

  • Corn meal? OH, we call that maize flour here. Yeah, I use that for my crumpets, it makes it a thick paste.

    As for the name of my allergy, I know there is one but I can't remember what it was, it's been about 10 yrs since I was diagnosed and all I remember is that it started with T and generally starts between 16 and 20 yrs but I was diagnosed at 23. But it's not celiac, I got no problem with gluten, mine is specifically wheat.

    Fresh baked bagels are much yummier than what you can find in any supermarket in Japan.

  • Nothing better than fresh baked stuff before it cools down. Many years ago I worked in a bakery & used to have still warm fresh bread with like flavored tuna for brekky...so good : )

    Tokyo suffers from a lack of bakeries that do more than reheat frozen dough. There's lots of chain places where all the dough is made in a factory somewheres, but no place I've seen does it all themselves.

  • I'll definitely have to try it though it seems, because of the ease of getting premade mixes and stuff in American, that I don't make things from scratch unless I'm in Japan so... it might not be until whenever I go back. I'm excited for it though, you made them sound so delicious. hahaha

  • As for a "proper" baking surface, if your oven has the grill on it, what we do is just wrap that part in foil, bake them on top of that, just make sure to spray the foil down with cooking spray so they dont stick to the foil!

    As for recipes...my mom mixes ham and cheese in some bagels, she also had a recipe of mashed potatoes baked inside a bagel!

    It's a typical Japanese combo oven / microwave but with a flat bottom, no spinning dish.

  • i think i understand why your so happy about your bagels as the bread i had while in japan was generally crap although pastries where pretty good but the bread all was tasted like it was stale even when it was fresh and the texture was all wrong.

    Some of the brands of white bread you can find in convenience stores, sometimes I just gobble a whole half loaf. Some is really good and some is dry and not edible.

    Oh yeah, cheese is easy enough to find. Though not generally in sandwich quantities. Supermarkets usually have your basic Kraft style processed cheese. Sometimes shredded in large amounts for making pizzas. Kaldi is a chain of imported food shops that has a wide variety.

    poppy flower are by far some of the most beautiful flowers.  girls will always ask me what type of flower they were, I would say "I don't know they are wild flower". lol

    Poppy seed bagels can make you fail urine drug tests. In Japan, the police can order you to come down to the station for a drug test. If you fail, they can arrest you.

  • Try an egg wash right before you bake them (one beaten egg). I think that's why they are pale. Some recipes leave that out.

    That reminds me of the first time I successfully made pizza crust from scratch and cooked an awesome pizza here in Japan. Ever since then, I have never bought a pizza. I always make mine from scratch and they are awesome. Especially while having a few beers while pretending to be chef ;)

    I never found bagels in the inaka, but you could get cream cheese pretty easily.
