You can use this particular one upon learning the lowest riding skill possible--225. The mount speed increases with the riding skill--as in, I can buy this one with a riding skill of 225, and only go 60%. Once I pay 5000g for the epic flying training, I don't need to rebuy the gryphon. I simply go 280% on it afterwards. It serves as a nonepic and epic flyer.
