No Red Label wine?  I guess the rum is an alternative. Recently came back from Jamaica, brought Red Label wine, omg am so disappointed, it's watery,the Jamaica products are lacking their main ingredients causing the traditional foods not to tasting the same. I use to be the mixer for my aunt when baking for Christmas, and could not wait to lick the bowl. Miss Mazie methods of cooking, and baking is amazing, enjoy her tips.

This is awesome. Excellent and clear presentation. Ms. Mazie makes me proud to be Jamaican. My brother and I used to mix cake with our mother when we were boys. Me and him used to fight over the left overs in the bowl and the spoon for licking when she was done. Seeing Ms Mazie at work brings back warm feelings of the festive season in Jamaica.

Mi nuh tink mi can manij di tuff crackas inna mi cake Mazie, but I suppose it is used to keep the cake moist. U hand dem trang Mazie, only u can cross it. I am amazed she did not even dip her finger in the batter and licked it off, that's the best part. The cakes were beautiful. Perfection!

I am thankful for your sharing this recipe; perhaps you could comment on how to bake them in tin can; the type that usually has cookies in it with a lid to close it. My nana used to make bake just so. Do you know this method?..I would love to give as gifts for Easter.
