Its not a "Spanish" omelette, its just regular potato omellete, just the same way you can use jam/cheese, bacon, etc.

and "santo domingo"??? thats the capital of Dominican Republic, no one says that as an exclamation.. so whoever is working on your spanish should really do a little research before doing something like this.
