oh i see it was already mentioned about nuts not being truly raw in stores! But yes there are several great places online to get truly raw nuts that will sprout and taste wonderful!
@Pianocarneseur12 actually truly raw nuts and seeds are hard to find...so at the grocery store "raw" nits aren't really 100% raw, I believe by law since 2007 or so they required a lower heat pasteurization. However if you do get truly raw nuts from a trusted source, yes soak them. I do for 24hrs and rinse them several times during that time. They sprout a little forming a little nob at the end, & u then know it's full of extra nutrients as the nut loads up to grow...but u then eat it then:).
An important note for all: You cannot purchase truly raw (unpasteurized) almonds from grocers and health food stores. You may only purchase unpasteurized almonds direct from the farmers. The store varieties which are deceivingly labeled as "raw" are pasteurized as per FDA law passed in 2007. Pasteurized almonds cannot germinate and are essentially useless for any health benefits!!!
Did you know that Almonds have cyanogenetic glycoside (Genetically developed cyanide). If you eat about 50-70 butter almonds you can actually die? not only that, the more bitter the almond, the moar cyanogenetic glycosides are in the almonds.
@itaigoldman there is no corn in agave nectar...agave is a spikey plants that resemble cactus, and the agave nectar comes out of it. High fructose corn syrup is comprises any of a group of corn syrups that has undergone enzymatic processing to convert some of its glucose into fructose to produce a desired sweetness. Agave nectar's glycemic index and glycemic load are comparable to fructose (is not HFCS), it in turn has a much lower glycemic index and glycemic load than table sugar.
can the almond milk store in the refrigerator for at least one week? i'd like to use it everyday, in my tea, i don't know how it would taste, but i really love drinking my tea with milk everyday. i suffer from acne so i want to shy away from milk. so i'm hoping that this is an alternative.
Oops. I forgot to add that you need to change your water often during the 24 hour period. Also once soaked and drained you can keep them in the fridge for a while in case you just want some to snack on. Air tight container.
1- why would you drain the water the almonds have been soaking in? wouldn't that have most of the nutrients and flavor and so when blending its creamier ?
2- and to authorgirl, what would be the point to rinsing almonds after soaking? what was the foodists reasons? i could see before but after not sure why
@ubuntumusic this is for truly raw nuts. The nuts in the store that say raw aren't truly raw. But if you get them raw from a farmer you need to soak them so they're not toxic to your body. You aren't rinsing out the nutrients...quite the opposite...the nutrients remain in the meat of the nuts:)
@AnitasHealthBlog So if I get my almonds from the store say ummm blue diamond brand i need to wash them than soak them overnight or 8 hours? Thanks alot i've just become a semi vegetarian.
Thank you so much! My husband and I have recently become Vegans and we are enjoying our NEW found foods. I had really never tried making my own almond milk. Thanks to you - I will NOW!
To answer ods1ODS, regular almonds, the ones you buy at the store, do NOT make cyanide when mixed with water! however there is a type of almond, the bitter almond that can produce cyanide. I don't think it's ANY cause for concern because im pretty shure bitter almonds are not sold at youre local Safeway, or anywhere for that matter. Im also pretty shure it's not as simple as "Just add water".
via wikipedia, "The bitter almond is rather broader and shorter than the sweet almond, and contains about 50% of the fixed oil which also occurs in sweet almonds. It also contains the enzyme emulsin which, in the presence of water, acts on a soluble glucoside, amygdalin, yielding glucose, cyanide and the essential oil of bitter almonds, which is nearly pure benzaldehyde. Bitter almonds may yield from 49 mg of hydrogen cyanide per almond.."
i want to try this but i keep hearing how the combo of almonds and water release cyanide. how can i be absolutely sure to avoid this. also, how long does it last in the fridge, and can u just use almond butter instead? thanks

Almonds should be soaked for 24 hours. This will ensure the enzyme inhibitors have been leached out entirely.

It's only bitter almonds that contain a cyanide substance, regular sweet almonds doesn't.
If you use bitter almonds, use them as spice.

Great vid. Do you know of a way to make almond milk without using a blender.
The speed of the blades in the blender do damage the proteins and other nutrients.
its best to use another method. Ive only just discovered this and am trying to find another way to make almond milk in a more gentle way.
God Bless.

According to most raw foodists, it IS very important to rinse the almonds thoroughly after soaking.

If you want to buy a blender from an ordinary store, and can't find that grinder, then I recommend the Braun blender, which is pretty tough.
Too bad almonds are so darn expensive.

Thanks for tips, just made almond milk without soaking nuts, still tastes great. Also added dates in blender to sweeten. Yum!
