  • @chrisangelcorona You can use the pastry cream from the "Perfect Cream Puffs" guide (link in the description).

  • Hi Kiako. After the puff pastry sheet is baked for Napoleons, how do you cut the rectangles so it doesn't break into lots pieces?

  • @duderdo Use a large knife with serrated blade. Do not apply too much pressure. Instead, move the knife like a saw. The plates won't break. :)

  • Hallo kiako. at what stage do you caramelise the puff dough ? I saw you return the baked dough again to the oven. do you sprinkel sugar powder on the dough when its still raw or after & at what temperature ? TNS :)

  • @liyonst Powder with the icing sugar 2-3 minutes before the puff pastry is fully baked. Then, just return to the oven and finish baking. Temperature may vary depending on the recipe you use (typical: 200°C / 390°F)

  • @verocity I usually roll out, fold in thirds, roll out again, fold in thirds. Then chill in the fridge and repeat the process two more times.

  • @syndgr834 No, this puff pastry does not require yeast... otherwise, it would turn into a croissant. :)
