I just finished making the scalopini (sp) with chicken breast and whole milk instead of cream, I also used portabella mushrooms instead of morel (couldn't find them anywhere) but WOW is this amazing. I hate chicken breadt for being dry, but this was amazing.
Using the chicken fat and juice as a sause for supermarket chicken? ARE YOU FUCKING KIDDING ME? I've been throwing that stuff out for years like an asshole. How does Jacques even think this stuff up?
Found his recipe for skillet apple charlotte on another site. Oven temp. 400 degrees. 3 apples, 2T. pure maple syrup, 1T. honey, 3 T unsalted butter, 4 slices white bread (without crust), 1 tsp. sugar, 3T. apricot preserves.
@werewasyo I think it's inhaling with a bit of a sucking sound towards the end. There's good one at 5:06.
He's still amazing though.
I think he's a culinary genius. When I'm watching him I'm always intrigued by how everything seems to come so natural to him. He dazzles with such ease. He's arguably the best, but notice he never acts pompous about his celebrity of status.
Such a good idea for that store-bought chicken! He's so good alone, though I do miss him with Julia! :D He's a master!

he didn't use veal b/c its expensive, but used morels and a huge pinch of saffron. LOL!

All you can say about this man is CLASS! It's a shame that the Food Network can't have chefs like Jacques Pepin on their lineup.

Anybody know the temperature of the oven when he put the apple charlotte in to cook?

He's amazing. Sometimes I feel like I'm watching an artist making a masterpiece.
However, he has this bad habit of making this weird sound all the time. He does it @ 2:44. It really bothers me.
