after the rinse if you soak the carcass in a saline or brine solution it will soak the 'gamey'ness out of the meats and organs. a tablespoon of salt in a liter of water is enough.
Dull knife :) You'd better have it sharp to do what you expect it to do, instead of having it dull and having to pull and have a random rip or slash that would spoil the organs/cut you.
