couldn't you try making a crust with finely chopped nuts which have been baked or dehydrated? You could stick with pecans, or make an almond crust. You can learn more from raw foodists.
Careful with the vanilla. Most vanilla is made with grain alcohol; something people on gluten free diets cannot have. I suggest using vanilla beans. Make vanilla sugar and use some of that for your sugar.
It's easy to make a gluten free crust with this... 1 tsp salt, 2 cups mash potato flakes, about 2 TBs Crisco, and 3-4 TBs of icey cold water. Cut the crisco into the flake and salt mix, add water a little at a time and stir just enough for it to mix evenly (DO NOT stir too much), press firmly into pan and WHALLAH! I sometimes mix in some rice flour in my batter as well! ^_^ But it's flakey and tastes great! You may have to experiment some to your tastes.
