It is a matter of esthetics and personal choice to remove the core. If you have really nice tomatoes that are red to the top, by all means can the whole piece of the fruit.

I like the seeds and i use all of it but the skin and core :) but i always make the diced tomatoes and can them . Good Job!

Not really sure to be honest. Certainly the enzymes are denatured. But it would be the same as the canned stuff you buy in the store.
