Just do the Dark Brotherhood quest. At the end you'll receive an almost unkillable horse and Cicero, a follower who cannot die. Pretty awesome.

you should get the ebony blade from the daedric quest the whispering door its extremely useful when swamped with enemies but you could also just enchant your weapons to absorb health

I nominate Marcurio as a companion, he's actually good at stealth so he doesn't blow your cover and he's incredibly good at taking care of himself. Plus you get some really good kill shots with him as you'll often strike the final blow against an enemy as he electrocutes them or fireballs them out from under your weapon.

Mjoll the Lioness is quite strong and can carry quite a lot of gear, so she's useful for looting. She's at the Riften Inn, although you to do a quest for her before you can ask her to be your companion.

P.S. Use unrelenting force when cornered by guards :)
