but in our chinese cuisine we combine all ingredients at once using a wok at high heat..so it cooks quick..and its fried rice which means the rice is fried with the rest of ingredients..along with hoisin sauce and others..

You should bring the rice to a boil on medium to high heat, and then cover it with a lid, reduce the heat to low, and let it just lightly simmer for 15 minutes.
I thought about frying the rice, but I decided to make it a little simpler--kind of in segments--the rice, the chicken, the vegetables, and the eggs. It would have been a little tastier with the rice fried first! Thanks, Mera! It's nice to hear from you!
Great recipe, Betty..one helpful tip is if u cut the chicken in cubes while its partially frozen it cuts faster & in even squares easily rather than waiting til its completely defrosted and more flimsy & then just toss the cubes in the wok or pan of oil for the saute and adding in ur veggies as u go..that way u only mess up one pan...your version looks tasty, tho! =)

Soonfully, I don't eat eggs so i don't know for certain, but i was told that people put eggs in fried rice not for protein but to soak up excess oil in the food from the pan to keep it from being too greasy.

u need a rice cooker betty they cook the rice to perfection i never mess it up in the rice cooker and u can steam veges in the rice cooker too
