hm in my opinion and way of tradditional cooking in family,egg should be add to rice and mix before fried it to keep eggs fresh and the rice all golden.And add meat,peas,carrot to the pan before add rices

@philipmarie1854 Most likely because for easier cooking, the mentality of putting everything in and then mixing it is popular in the west. Chinese cooking is very timing dependent, similar to baking, you need precise timing and temperature to make quality food, so by adding the egg last, you get a smooth texture instead of rough rubbery salty bits. That is NOT good fried rice. WAY too much soy sauce and the egg should be added LAST. Fried rice should not be mushy... We always used left over rice from the day before, it seems to work better than fresh made rice. Also sesame oil is a good addition.
