You're a great student! May I advise you to get MUSCLES in your hands (no kidding) and not to lift your fingers that high. It'll make playing this rondo much easier to play and with more virtuosity. Good luck!
It was played slower on purpose to ensure that all the parts were properly proportioned with respect to tempo. My hands were cold and I wasn't sure I would be able to maintain the appropriate control in the faster sections. Having to labor on the more technical parts sounds much more amateurish than having to slow things down a little. Also, sometimes the perception of speed is an illusion - compare Gould's 1955 and 1981 goldberg variations recordings for an example.
