What onion does he use for the first dip? I've tried red, white, yellow, vidallias (sp?). I cannot get them that color without burning them--no matter how low the heat is. -.-
Are you using enough oil, and stirring -frequently-? You can't really walk away from onions when they're cooking because when they're cut that small, they burn really easily.
Maybe...could be I'm not stirring as much as I should. Then again..didn't think they needed much stirring due to a previous episodes where he burlee (sp?) the onions. Which he called burned. I'll give it a shot though, and add a touch more oil. Thanks. ^^

Have you ever noticed that when he says to move the object you're cutting, and not the knife, he pulls the knife down with every turn of the object anyhow?
He moves the knife only very slightly. The idea is that the knife always stays on the top of the food, rather than move his cutting hand around the avocado.
Oh, no I realize that it is helping and all but he just says that it contradicts what he says... It was just an observation not an error being pointed out.

Though the name of the episode is taken from the film "Reefer Madness".
I've never seen that movie so I don't know if there is a mental hospital in that one.

i believe he used white onions. i think you have to carmelize them,and sautee them until they get brown,it takes about 20 minutes or so
