I'm so glad I found this video! I have attempted to make this whipped cream just straight from a vegan cookbook but it came out too runny. Actually seeing someone make it really helps. I love your beautiful voice and sense of humor. this is an awesome video! I want to try a vegan cashew whipped cream also to go with the sweet potato pie I am making for Thanksgiving. I love being vegan. Cooking has become a fun creative process free from harm to another being.
And the added editing made it more fun and relaxing as well as some added giggles. One question though, do you shop at whole foods or do you shop some where else? I have publix and walmart around me but wouldn't know where to find whole food.
@talim67 Everything we bought for this (the 3 things lol) was actually from publix! The coconut milk can usually be found in the Ethnic Foods aisle. The kind we get is in the asian section. There's also coconut milk in the hispanic section. The only difference is the hispanic coconut milk usually has emulsifiers (things that prevent the fat from separating) You can still make it with that kind, but sometimes it takes longer to solidify. If its not in the ethnic aisle, then try the baking isle

Actually, I think I'm going to try this in place of whipped cream next time I make coconut cream pie (although I'll be lazy and use my beater! :-)

I added vanilla extract to this recipe. Vanilla extract takes away the bland coconut flavor.
