You might try using cane sugar, honey or malt syrup in your boil water. Gives them a nice shine so you don't need egg white. Also try using actual boiling water. This seals the dough and gives you a beautiful hard crust. Your bagels looked a bit underdone. The tops should be a beautiful brown color when they are finished.
Also, try putting your toppings on a sheet and laying the bagels on it. Easier, quicker, less messy!
