Selective Color from NewBlueFX will allow you to isolate colors in black/white. Pretty Cool, just google "New Blue FX" and see "Video Essentials V".

If you film another black and white movie chocolate syrup can be used for blood. The old black and white movies used chocolate syrup for blood too.

To the mac there is a program called color, its a part of the FInal Cut Studio pro, (costs a fortune but if you want to be illegal you can get it free). THere you can create masks on your video and color edit it, so that means change the light on half a face or desaturate everything but eyes. very useful and easy if you watch some tutorials first.

Hey dude, nice work. In reference to your question, the best way to go B&W but keep one color is to use your secondary color correctors. I don't know if AE has it (I use Vegas, which is like AE and Premiere in one program) but that's the easiest way. You can also shift the hues of colors like Robert did in Sin City. The yellow bastard was acutally blue, but shifted to yellow. It's all in the secondary color corrector.
