At online Morroco spice stores, like Zamouri (in Kansas) or BLESSAC (in Southern California)(both websites also sell through Amazon), you can get a couscou spice mix with all these spices in one bottle, then follow Zatima's video! Wonderful!
to make smen get unsalted butter, let come to room temperature, wash it with cold water to drain off excess milk, add one teaspoon of salt to every cup of butter, store in clean glass containers and let set in a dark cool place, not the fridge, for at last 2 months or more. I never tried blue cheese before but I heard that it smells like it. so check if it smell anything like blue cheese then it should be ready. Good luck!
Thank you so much! I always thought you must have sheep or goats milk and that there were spices in it. This sounds so easy. I can get goat's milk yogurt and goat's milk, and goat's milk ice cream,, but haven't checked about butter. We have several goat cheese maker's here in California-so I can probably find it. Also the Bulgarian store might have sheep milk butter as they carry kaskaval-sheep's milk cheese.

Msany stores here carry goat's milk.

well you can use butter made with either cow or goat milk. Whatever is available and suits you taste better.
